Steeped is a new book from Michelle Francl, who recommended the best chemistry books for us, and it’s already caused an international incident. It’s an exploration of the chemistry of tea, which apparently contains more than 100 different chemical compounds. Francl suggests adding salt to reduce bitterness, as was done by the Chinese centuries ago.
