The Times Cookery Book

***STAFF PICK*** This is an old cookbook, but it's a goody. It has a number of really tasty recipes while not making things overly complicated. Google lasagna, for example, and many of the recipes suggest using three different types of meat. Katie Stewart's recipe uses just one kind, and is the best I've ever tasted. My favourite recipe in the book is probably the moussaka, but I've also had a lot of success with her soups. (As for gammon-and-pineapple and other recipes that date from when the book was written in the 1970s, you can just ignore those.)
